MAITAKE SOBA RAMEN
Rehydrate 1 oz Maitake mushrooms in warm water. Cook 4 oz soba in a large pot of boiling salted water until al dente; drain. Bring 1 clove garlic, 1/2” piece peeled ginger, 2 cups water to a boil in a saucepan; reduce heat and simmer for 10 min. Add 1/4 cup soy sauce. Set broth aside. Heat 2 tbsp oil in a skillet over medium heat. Add rehydrated mushrooms; season with salt and pepper. Cook until golden brown, 10–12 minutes. Transfer to a plate. Return reserved broth to a simmer. Divide soba and broth among bowls; top with mushrooms, 2 small sliced turnips, and egg yolk each. Add thinly sliced scallions and sprinkle with sesame seeds.
