The winter mushroom that thrives when everything else goes dormant.

Enoki, also known as Velvet Foot, is one of the most widely cultivated mushrooms in the world. While many people recognize the long, white supermarket version, wild Enoki is a completely different sight - producing beautiful caramel-colored caps with velvety dark stems during the coldest months of the year.

Our Sunset Enoki was collected from the forests of South Carolina and selected for outdoor cultivation on hardwood logs and woodland mushroom beds.

🌱 Why You'll Love It

❄️ Fruits during cool and cold weather

🍄 Sweet, meaty flavor with excellent texture

🌳 Great for hardwood logs, stumps, and raft cultivation

🌿 Beautiful caramel-colored wild form

🏡 One of the few mushrooms that thrives when winter arrives

Where Can I Grow It?

Enoki grows well on:

  • Hardwood logs
  • Hardwood stumps
  • Half-buried hardwood rafts
  • Sterilized hardwood sawdust
  • Woodland garden settings

👉 Excellent for both outdoor and indoor cultivation.

🍽️ What Does It Taste Like?

  • Mildly sweet
  • Meaty texture
  • Delicate mushroom flavor

🔥 Great for:

  • Soups
  • Hot pots
  • Stir-fries
  • Noodle dishes
  • Light sautés

👉 A versatile mushroom used throughout Asian cuisine.

🍄 What Makes Enoki Special?

Most people know Enoki as the long white mushroom sold in grocery stores.

That's actually the result of growing Enoki in darkness.

When grown naturally outdoors, Enoki develops:

  • 🍂 Golden to caramel-colored caps
  • 🌿 Dark velvety stems
  • 🍄 A completely different appearance than the commercial form
  • 👉 Same species. Completely different look.

❄️ The Cold Weather Specialist

Enoki prefers:

  • Cool temperatures
  • Frosty nights
  • Late fall through winter conditions

In the Southeast, wild Enoki often fruits near the end of winter when few other mushrooms are producing.

👉 A fantastic addition to a four-season mushroom garden.

🌳 Sunset Enoki
