CHICKEN AND VEGETABLE STIR FRY DIRECTIONS

Prepare 1 cup of steamed rice. Place 2oz mushrooms in bowl, and cover with boiling water. Let soak 15 to 20 minutes. Rinse well. Heat 2 tbsp oil in large skillet or wok over hight heat. Add 1 minced clove of garlic and 1/2# cubed chicken breast. Stir-fry for 3 to 4 minutes, until chicken is cooked through. Add mushrooms and 1/3 cup sliced red bell pepper. Stir-fry for 2 to 3 minutes. Whisk together 1/2 cup chicken broth, 2 tbsp dry sherry, 2 tbsp soy sauce, 1 tbsp cornstarch and 1 tbsp sugar in small bowl. Pour into wok. Add 1/2 cup snow pea pods, strings removed, and cook until sauce thickens. Serve immediately over steamed rice.
