- Place the dried mushrooms in a bowl.
- Cover completely with hot water.
- Soak for approximately 20โ30 minutes, or until tender.
- Remove the mushrooms and gently squeeze out excess liquid.
- Chop larger pieces if desired.
- Cook thoroughly before eating.
Don't automatically throw away that soaking liquid!
Strain it very well through a fine filter to remove any natural grit, then use it as a flavorful mushroom broth in soups, sauces, gravies, and risotto.

Ingredients
1 package Dried Mushroom Adventure Mix
1 carrot, diced
1 onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp thyme
1 tsp rosemary
1 tbsp white wine vinegar
4 cups vegetable broth
1 cup coconut milk
Salt and pepper to taste
Fresh parsley for serving
Directions
Cover the dried mushrooms with hot water and soak for 20โ30 minutes. Drain and chop larger pieces.
Heat the olive oil in a large pot over medium-high heat. Add the carrot, onion, garlic, thyme, and rosemary and cook for about 5 minutes, until fragrant and beginning to soften.
Add the rehydrated mushrooms, white wine vinegar, vegetable broth, and coconut milk.
Bring to a boil, then reduce the heat and simmer for approximately 20 minutes, or until the carrots are tender and the flavors have come together.
Season with salt and pepper and finish with fresh parsley.
