Maitake, or “Hen of the Woods” mushrooms have a very strong flavor and aroma, these delicately dried fronds and pieces rehydrate wonderfully in hot water, which can then be chopped and cooked as if you were using fresh mushrooms.

Maitake are potent anticancer mushrooms that have also shown to have cholesterol lowering properties.

MAITAKE SOBA RAMEN

Rehydrate 1 oz Maitake mushrooms in warm water. Cook 4 oz soba in a large pot of boiling salted water until al dente; drain. Bring 1 clove garlic, 1/2” piece peeled ginger, 2 cups water to a boil in a saucepan; reduce heat and simmer for 10 min. Add 1/4 cup soy sauce. Set broth aside. Heat 2 tbsp oil in a skillet over medium heat. Add rehydrated mushrooms; season with salt and pepper. Cook until golden brown, 10–12 minutes. Transfer to a plate. Return reserved broth to a simmer. Divide soba and broth among bowls; top with mushrooms, 2 small sliced  turnips, and egg yolk each. Add thinly sliced scallions and sprinkle with sesame seeds.
