SAUTEED BLACK TRUMPETS WITH ASPARAGUS AND LEMON
Boil 8 oz asparagus, cook for 2 minutes or until crisp-tender. Cool with ice water. Drain well. Heat a large skillet over medium-high heat. Add 1/2 tbsp extra-virgin olive oil; swirl to coat. Add rehydrated 1oz black trumpets, sautee 7 minutes or until mushrooms release most of their liquid. Add asparagus; cook 1 minute or until thoroughly heated. Remove from heat; stir in a pinch of salt, 2tsp butter, 1/2 tsp grated lemon rind, and pepper to taste.
