What Do Porcini Mushrooms Taste Like?

💧 How to Rehydrate Dried Porcini

  1. Place the dried Porcini pieces in a bowl.
  2. Cover with hot water.
  3. Soak for about 15–20 minutes, or until tender.
  4. Remove the mushrooms and gently squeeze out excess liquid.
  5. Chop or slice as desired and cook thoroughly.

Do not throw away that soaking liquid!

Porcini soaking water is liquid gold. Strain it carefully through a fine strainer or coffee filter to remove any grit, then add it to soups, risotto, gravy, sauces, or broth.

🍚 Creamy Porcini Risotto

Ingredients

1 oz dried Porcini mushrooms
1½ cups risotto rice
½ small onion, finely chopped
3 tbsp olive oil
⅓ cup dry white wine
3 cups broth or water
¼ cup butter
½ cup grated Parmigiano-Reggiano
½ cup heavy cream
Salt and pepper
Fresh parsley

Directions

Soak the dried Porcini in 1 cup hot water for about 15 minutes. Remove the mushrooms, strain and reserve the soaking liquid, and roughly chop the Porcini.

Sauté the onion in olive oil over medium heat until softened. Remove and set aside.

Add the rice to the pan and stir for several minutes to lightly toast and coat the grains. Return the onions and add the white wine. Cook until mostly absorbed.

Gradually add the broth along with the strained Porcini soaking liquid, stirring as the rice cooks. Add the chopped Porcini and continue cooking until the rice is creamy and al dente.

Remove from heat and stir in the butter, Parmigiano-Reggiano, and cream. Season with salt and pepper and finish with fresh parsley.
