RISOTTO WITH PORCINI MUSHROOMS
Steep 1 oz dried porcini in 1 cup of hot water for 15 min. Sauté ½ small onion in 3 tbsp oil in med saucepan on med heat. Transfer onion bits to a plate and add 1½ cups rice into pan, stirring for 5 min to coat on oil. Return onions, stir in ⅓ cup dry wine for 2 min. Slowly add 3 cups of water or broth to the pan. Chop and add porcini. Stir well and let rice cook to al dente. Turn off heat, stir in ¼ cup butter, ½ cup grated Parmigiano, ½ cup heavy cream, add salt, pepper and parsley.
