Warm Blue Oyster (Pleurotus ostreatus)

One of our most reliable and widely grown strains.

  • Fruiting Temps: 50–80°F (can tolerate higher)
  • Best For: Year-round indoor growing
  • Flavor: Meaty, mild, slightly sweet

This is a go-to strain for beginners and commercial growers alike. It produces thick, beautiful clusters and performs consistently across a wide temperature range.


Cold Blue Oyster (Pleurotus ostreatus)

A stunning winter mushroom with deep blue tones.

  • Fruiting Temps: 35–50°F
  • Special Requirement: Needs a cold shock to fruit
  • Flavor: Meaty and sweet

Perfect for winter growing. The colder it gets, the deeper blue the caps become.


Brown Oyster (Pleurotus ostreatus)

A hearty, flavorful strain with serious culinary value.

  • Fruiting Temps: 50–75°F
  • Best Feature: Entire mushroom is edible, including the stem
  • Flavor: Rich, earthy, great meat substitute

Very CO₂ tolerant and ideal for indoor growing. Note: prefers opaque containers,  it doesn’t love clear bags.


Phoenix Oyster (Pleurotus pulmonarius)

The true summer oyster.

  • Fruiting Temps: 75–95°F
  • Best For: Hot climates and summer growing
  • Flavor: Sweet, soft, slightly anise-like

Fast-growing and excellent for warm-weather cultivation. Also useful for mycoremediation and breaking down organic material.


Pink Oyster (Pleurotus djamor)

Fast, vibrant, and fun to grow.

  • Fruiting Temps: 75–95°F
  • Growth Speed: Very fast (can fruit in 7–10 days)
  • Flavor: Seafood-like

Great for beginners, classrooms, and quick results. Best harvested young for ideal flavor and texture.


King Oyster (Pleurotus eryngii)

Thick, meaty, and incredibly satisfying.

  • Fruiting Temps: 50–65°F
  • Best Feature: Dense stem — perfect for slicing into “scallops”
  • Flavor: Rich, buttery, seafood-like

A bit more advanced to grow, but well worth it.


Aspen Oyster (Pleurotus populinus)

A mild, versatile oyster with wide appeal.

  • Fruiting Temps: 60–70°F
  • Flavor: Mild, adaptable to many dishes

Grows in beautiful shelf-like clusters. Great substitute for button mushrooms and produces multiple flushes.


Tarragon Oyster (Pleurotus euosmus)

A unique culinary oyster with herbal notes.

  • Fruiting Temps: 70–80°F
  • Flavor: Subtle tarragon/anise aroma

Delicate and flavorful. A favorite for chefs looking for something a little different.


Flamingo Oyster (Pleurotus salmoneostramineus)

A warm-weather performer similar to pink oyster.

  • Fruiting Temps: 70–98°F
  • Flavor: Similar to pink oyster

Mulberry Oyster (Pleurotus ostreatus)

Pearl Oyster (Pleurotus ostreatus)

Pearl oysters are one of the most commonly cultivated oyster mushrooms for a reason. They grow quickly, form beautiful clusters, and perform well on a wide range of substrates both indoors and outdoors.


POHU (Hungarian Brown Oyster)

A rich, hearty oyster with excellent structure and flavor.

  • Fruiting Temps: ~50–75°F
  • Best For: Meatier dishes and robust growth

This strain is a favorite for growers looking for a more substantial oyster mushroom. It holds up well in cooking and produces thick, satisfying fruiting bodies.


Grey Dove Oyster

Grey Dove produces attractive clusters with soft grey tones and dependable yields. A great all-around strain for growers who want both beauty and performance.


Sporeless Oyster

Cleaner growing, same great oyster performance.

  • Fruiting Temps: ~55–75°F
  • Best For: Indoor growers and enclosed spaces
  • Flavor: Mild, similar to classic oyster varieties

This strain produces little to no spores, making it ideal for indoor cultivation where spore load can become an issue over time. A great choice for grow rooms, greenhouses, and repeated production cycles.

What is oyster mushroom sawdust spawn?
Oyster mushroom sawdust spawn is a fully colonized growing medium used to inoculate materials like straw, hardwood logs, coffee grounds, and other agricultural byproducts to grow oyster mushrooms.
What can I grow oyster mushrooms on?
Oyster mushrooms are extremely versatile and can grow on a wide range of materials, including:

• Hardwood logs and stumps (oak, maple, poplar, sweetgum, and more)
• Straw and cottonseed hulls
• Coffee grounds
• Paper and cardboard
• Other agricultural byproducts
Which oyster mushroom variety should I choose?
It depends on your growing conditions:

• Cold weather (35–50°F): Cold Blue
• Cool to moderate (50–75°F): Warm Blue, Brown, King Oyster
• Warm weather (75–95°F): Pink, Phoenix, Flamingo

Beginner-friendly: Warm Blue, Pink Oyster
Meaty texture: King Oyster, Brown Oyster

Choosing the right strain for your environment is key to success.
Do oyster mushrooms need a cold shock to fruit?
Some varieties do.

Cold Blue Oyster requires a cold shock (near-freezing temps) to trigger fruiting.
Most other oyster varieties do not require this step.
Can I grow oyster mushrooms indoors?
Yes! Oyster mushrooms grow extremely well indoors.
For best results, use:

• Pasteurized straw
• Cottonseed hulls
• Other agricultural byproducts

They are one of the easiest mushrooms to grow at home.
Can I grow oyster mushrooms outdoors?
Yes. Outdoors, oyster mushrooms can be grown on many agricultural waste products, such as cereal straws. They prefer to be grown in containers, and this can be done in a greenhouse setting or jsurt plain outdoors, as long as the area is shaded out.
How fast do oyster mushrooms grow?
Oyster mushrooms are fast growers.
Some varieties (like Pink Oyster) can fruit in as little as 7–10 days under ideal conditions.
Most varieties produce multiple flushes over time.
How many harvests (flushes) can I expect?
Most oyster mushroom grows will produce 2–3 flushes, depending on conditions and substrate.
What do oyster mushrooms taste like?
Oyster mushrooms are:

I ordered 3 5# bags of oyster spawn, warm blue, phoenix and pink. Used hardwood heating pellets and alfalfa pellets as substrate in 10 gallon totes. They are fruiting after just 2 weeks. Yippee!

Mycelium was heavily weighted towards the top of the sawdust with little to no visible mycelium about half way down. It did end up growing fine in straw, but about a week slower than a properly populated bag would have allowed.

I bought these to help break down all the fallen trees from Hurricane Helene. I was surprised to see these oyster mushrooms popping up so quickly and spreading all throughout stacks of wood away from where the block was buried after several days of rain.

Oh yay! I would love to see some photos. My pink oyster mycoGarden just produced as well. it was quite a pleasant surprise seeing the pink mushrooms against the green tomato plant background. It is making me constantly walk by my garden out of curiosity, just in case I see some other mushrooms pop up.

I did ! It looks awesome! I don't know why I got the Kings I guess I thought you could grow them on logs. Inhale grown some mushrooms in tubs but im not really set up for it,and I would need some masters mix. I think I'm just going to try and let them fruit in the bag although they do sound very tasty !

I appreciate the 3bags of Sawdust spawn arriving quickly and in good condition. I would request Muchroom Mtn folks carefully inspect the sawdust as I have experienced lots of larger chips that plugged up my plunger and kept it from getting a full plug into the holes we drilled.i had to sift through the the other 2 packages to remove the chips before inoculating our logs. It was very time consuming and irritating.We will wait for the logs to produce to give a final review. Thanks folks.

I refrigerated this until ready to mix with two 5-gallon buckets of straw that had been pasteurized with boiling, then cooled to room temperature. The buckets have holes drilled in the sides and I stack them and zip them into a large plastic garment bag, and by spritzing I maintain high humidity. The oyster mushrooms that grow through the holes are delicious! Best of all, after the crop is done I dump the straw in a shady moist corner of my garden and soon, mid winter, despite freezing temperatures the oyster mushrooms pop up again, ready for us to eat with no competition from the chipmunks that stay home in their burrows on cold days.
