Candy Cap mushrooms are valued for their amazing and strong maple like aroma. You can smell them 1/2 a mile away.
They prefer colder climates to grow, this is why we don't have them in the South East of US. They are also mycorrhizal and cannot be cultivated.

CANDY CAP SYRUP
Soak 1/4 cup dried Candy Cap mushrooms in 1 cup water until rehydrated. Blend mushrooms and water in a blender. Transfer to a medium size pan on medium heat. Add 1 cup sugar and heat until boiling. Turn to low and simmer 5 minutes. Mixture can be strained depending on intended use. Strain or not, cool and then refrigerate. Use anywhere you would use Maple syrup!
